Philosophy
The basic principle is the production of wine with the least possible intervention, both in the vineyard and in the winemaking process.
In the vineyard, no fertilizers or insecticides are used, and plant protection is carried out with the fewest possible interventions regarding fungicides.
The maximum production was set at one bottle per vine, harvested by hand.
Fermentation takes place in small, specially designed stainless steel tanks using the smallest possible amount of potassium metabisulfite, and wild yeasts.
No other chemical or mechanical intervention is performed on the wine. Bottling is done without filtration.
